  • Combine all ingredients and beat for 2 minutes.
  • Pour into greased and floured 9x13 baking pan.
  • Bake at 350° for 50 minutes, or until pick comes out clean.
  • Cool for 10 minutes.

  1. I have tried several of your recipes before so I already knew that this one would be tried and true. I served this with fresh strawberries and whip cream. My family couldn't get enough of it. The only change I made was to use a Lemon Cake Mix instead of a yellow cake mix because that is all I had in my pantry. This is such an easy recipe that everyone should give it a try.   2. It is very easy to make and takes no time. I only used half the amount and bake 35 min. I like it when first came out of oven, nice and warm. Definitely would make it again, maybe with different flavor of pudding mix.
     
  3. I made this just as said, topped it with powdered sugar and it was eaten before anything at dinner it was so good! Moist, lemony, light, delicious. This is one I will make often. Thanks!
     
  4. Does it get any easier than this? What a simple dessert! I used both lemon cake mix and lemon pudding, and while the colour is a wonderful yellow, I was a little surprised the lemon flavour wasn't stronger; it was definitely there, but subtle. I served this with some whipped cream and my family gave it their thumbs-up. The only suggestion I have is to watch the time very carefully; I reducued my oven temp to 325F since I was using a glass 9x13 pan, and still the cake was done, even a tad overdone, at just 40 minutes. The next time I make this--and there definitely will be a next time--I will check the cake even earlier. Thanks for the recipe, Inez; it's gone into my "keeper" folder.
     
  5. My DMIL makes a poppyseed cake with this recipe but using a lemon cake mix and coconut cream pudding mix so knew this would be a fantastic cake. Baked in my bundt pan and did add a light sprinkling of powder sugar. I think a lemon glaze would be a nice touch too. Made and reviewed for MizzNezz's Cookathon.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
