  • 1 (18 ounce) box white cake mix, prepared in batter form with
  • egg, as called for by cake mix
  • oil, as called for by cake mix
  • water, as called for by cake mix
  • 1 (1/4 ounce) package cherry unsweetened flavored drink mix (other red-colored drink mix will also work)
  • 12 cup miniature semisweet chocolate chips, plus
  • 2 tablespoons miniature semisweet chocolate chips
  • 1 (12 ounce) container whipped white frosting
  • green food coloring
  • red food coloring
  • 23 cup green jelly beans

  • Heat oven to 350°F Grease bottoms only of two 8- or 9-inch round pans with shortening or cooking spray.
  • In large bowl, stir into batter 1/2 cup of the chocolate chips. Add the drink mix, stir, and pour into pans.
  • Bake 27 to 32 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely, about 1 hour.
  • In small bowl, stir 1 cup frosting with 10 to 12 drops green food coloring. Stir 10 to 12 drops red food color into remaining frosting.
  • Cut cake rounds crosswise in half to make 4 halves. Frost uncut sides with green frosting; press green jelly beans into frosting. Frost top of cake with red frosting; press remaining 2 tablespoons chocolate chips into frosting for seeds.
  • To serve, cut into wedges.

  1. I don't understand the point of the drink mix. You can color any cake with gel paste food coloring such as Wilton or Americolor. Also what are the jelly beans for? Texture or faux leaves??

  1. Perhaps one was drinking while writing the recipe? A little bit of this. A little bit of that. A little bit of jelly beans. We're they thinking of a jolly bean giant cake?
     
  2. The directions seem very unclear. They do not address the 4 layers and what to do with them; do you make 4 cakes? Are they cut to resemble a half watermelon. The picture and directions seem to contradict. I haven't made this yet; I can wing it to how I want it, but the directions need tweaking.
     
  3. I haven't tried it yet, but I did find out what to do with the green jelly beans. If you look at the picture closely you can see the jelly beans sticking out from the icing. Don't know if I'd need the jelly beans, but I guess it makes it cuter.
     
  4. It is impossible to find an 18 oz. cake mix any more. Companies need to adjust their recipes.
     
  5. It sounds like a person needs to have a skill for deciphering to get it right, but looks great if you are extra creative. Why use cherry Kool aid when you can get watermelon? ?

None of them really compare to Bermuda, though! <br> <br>I don't really have a favorite cookbook; I prefer stumbling upon recipees from friends & family, magazines, or the backs of product boxes. <br> <br>If I had a month off with no responsibilities, I would probably lay on a towel at the beach with a good book in my hand.
