Vegan Chocolate Cake & Chocolate Frosting

ingredients
- 3 cups flour
- 2 cups sugar
- 6 tablespoons cocoa
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3⁄4 cup vegetable oil
- 2 tablespoons vinegar
- 2 teaspoons vanilla
- 2 cups cold water
- 8 ounces imitation cream cheese (I use Tofutti brand)
- 1 teaspoon vanilla
- 1⁄2 cup cocoa
- 1 1⁄2 - 2 cups powdered sugar
directions
- For the cake:.
- Mix the first 5 (dry) ingredients.
- Add the next 4 (wet) ingredients, stir until smooth.
- Bake in two greased, floured pans at 350 degrees for 30 minutes.
- Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake.
- For the frosting:.
- Using an electric mixer, mix the final 4 ingredients until smooth.
- Frost cake when it has cooled.

Made this as a bundt cake specifically for my vegetarian son & DIL, & gave it to them with one large piece missing! Chocoholics that they are (as are the 2 of us) this dessert was much enjoyed ~ AN ABSOLUTELY GREAT TASTING CHOCOLATE CAKE! The recipe is now tucked into my cake cookbook ~ Many thanks for sharing it!
