Very good cookies. Made half the recipe and it gave me 33 cookies. Baked them for 11 minutes and they were crunchy on the edges and semi-soft in the middle, just how we like it. The lemon taste was very subtle and next time I will add more lemon juice and zest. When cooled the dough was very stiff but it was no problem to roll the cookies. Did not flatten with a glass, just used my fingers, which by the way I did NOT dip in sugar.........The suggestion from Jamilah.s Kitchen to make some of the batter into a crust is a very good idea. Will try that and make a lemon pie. I am very pleased I found this recipe. Thanks for posting.

These were delicious. I did make a lemon glaze when I first baked these. I liked how the oatmeal added a crunch. I made a batch and froze the batter then later I baked the rest and made it into a crust for cheese cake. It was delicious. Love Lemon thanks so much for sharing this recipe. Mace for PAC Spring 09.

ABSOLUTELY WONDERFUL TASTE TO THESE COOKIES! I was going to send some off to work with my other half, but they are so addictive that by the time Monday morning came around most of them were gone! We really enjoyed the lemon flavor & another time I'd like to make it even more intense by taking the suggestion & making a lemon glaze! LOVE THOSE LEMONS! Nice, light, cookies. Very simple & delicate flavour, slightly chewy texture. These would be a great cookie to cleanse the pallet. Watch them carefully; don't overbake! Made for PAC Spring '09. **Note - I had to change my rating after sending the cookies into my DH's work and everyone was begging for the recipe! They were a HIT!
