- 3⁄4 cup butter, softened (no substitutes)
- 2⁄3 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄3 cup seedless raspberry jam
directions
- In a mixing bowl cream butter and sugar.
- Add eggs and vanilla, mix well.
- Combine flour, baking powder and salt; gradually add to creamed mixture and mix well.
- Divide dough into 4 equal portions; shape each into 12 x 3/4- in log.
- Place 4 in apart on greased baking sheets.
- Make a 1/2 in depression down center of logs; fill with jam.
- Bake at 350 for 15-20 minutes or until lightly browned.
- Cool for 2 minutes; cut diagonally into 3/4 inches slices. Remove to wire rack to cool completely.

These are fabulous cookies that I have been making for years. I had originally found the recipe in a Yankee magazine. I often will separate the dough into 4 parts and flavor them different and use different jams and fillings to get a variety and then dust them with powdered sugar. My recipes uses less salt (1/4 tsp). These are really good though and very easy to make, as well as impressive and delicious.
