Peanut Butter Chocolate Chip Cookies

ingredients
- 1⁄2 cup butter, softened
- 1⁄2 cup shortening
- 1 cup sugar
- 2⁄3 cup brown sugar
- 1 cup peanut butter
- 2 eggs
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 cup old-fashioned oatmeal
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 2 cups semi-sweet chocolate chips
directions
- In a mixing bowl, cream butter, shortening and sugars.
- Beat in peanut butter, eggs, and vanilla.
- In another bowl, combine oats, flour, baking soda, and salt. Stir into the creamed mixture.
- Stir in chocolate chips.
- Drop by rounded tablespoons onto ungreased cookie sheets.
- Bake at 350 degrees for 10-12 2minutes. Cool approximately 2 minutes before removing to a wire rack to cool.
- Note: Oats may be put through a food processor or blender until fine if desired.

These are so good! Glad I only made a half batch because we can't stop eating them! *LOL* They're a soft, yet chewy cookie with even a hint of crispness on the edges. The only thing I did differnt was use egg substitute for the egg and didn't blend my oatmeal. Thanks Gina Calina for a great addition to the cookie file! :)
