Peanut Butter and Banana Cookies

ingredients
- 1⁄2 cup peanut butter (at room temperature)
- 1⁄4 cup margarine, softened
- 1⁄3 cup mashed ripe banana
- 1 egg
- 1⁄2 teaspoon vanilla
- 1 cup flour
- 1⁄2 cup Splenda sugar substitute
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
directions
- Cream together peanut butter, margarine, banana, egg and vanilla until light and fluffy.
- Mix remaining ingredients separately. Blend into peanut butter mixture until smooth.
- Form int 1-inch balls. Place on baking sheet, flatten with fork to desired thickness.
- Bake at 350F for 10-12 minutes or until golden brown on bottom.

My husband loved these! I'm always looking for cookie recipes with "useful" ingredients in them that are a bit better for his health. I used natural peanut butter, half butter/applesauce, half white & whole wheat flour. The batter waas nice & moist & was easy to handle. Baking time was right around 10 min for me (I had to use 375 degrees but it was fine!). Hubby said there was definate PB and banana flavor--a great soft, moist cookie. Thanks so much for sharing!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
