Liisa's Best Banana Nut Bread - really-it's that good!

This is one of the best banana breads out there. It's very moist and full flavored. Often, I'll put in mini-muffin tins for the kids (cut the baking time)...it is really that good!! Hope you think so too!

• Total Time: 1 hrs 50 mins
• Prep Time: 20 mins
• Cook Time: 1 hrs 30 mins

Ingredients:

Yield: 1 loaf

• 1/2 cup oil (I use a canola)
• 1 cup sugar
• 2 eggs, beaten
• 3 very ripe bananas, mashed
• 2 cups flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 3 tablespoons milk
• 1/2 teaspoon vanilla
• 1/2 cup chopped pecans

Directions:

1. Cream the oil, sugar, eggs together.
2. Add the mashed bananas.
3. Sift the dry ingredients together and add slowly to the creamed mixture.
4. Add the milk and vanilla.
5. Fold in the chopped pecans.
6. Bake in a greased and parchment lined pan at 350 degrees for 1 1/2 hours.

Very nice banana bread. I like that fact that other flavors, such as cinnamon and chocolate are not added. I baked mine in a 5 1/8 cup metal loaf pan. It was a little full, but didn't overflow because it flares at the top. It took only about 1 hour for my banana bread to be baked. (But my oven tends to be unreliable.) Thank you for sharing this recipe with us.

I made this as muffins. Used 4 bananas instead of 3 and used toasted walnuts. Took them to work and everyone loved them. Later made as loaves and bread was done after 1 hour 10 minutes.

It is that good... Liisa did not give a pan size so I used a 9 X 5 glass loaf pan. It could have been the glass, but it seemed to be done after an hour and 10 minutes I left it in for one hour 20 min which was too long. it was not burnt just over brown. I put a foil tent over it at one hour because it was getting too brown. I also did not line the pan with parchment.
