- 8 ounces cream cheese, softened
- 1⁄3 cup butter, softened
- 3 tablespoons lemon juice
- 1 teaspoon grated lemon, rind of
- 4 cups powdered sugar
directions
- Beat together cream cheese, butter and lemon juice.
- Add peel.
- Gradually add powdered sugar; beat until smooth and creamy.

The flavor and texture of this frosting is great. However, with w cups of powdered sugar is was like soup. I added an entire box (1 lb.) to the cheese butter mixture, and it still will not hold its shape. So instead of decorating the cake I just kinda drizzled the frosting over the cake. Maybe I'll put a little frosting in condiment cups and serve it along for dipping, hate to just pitch it. Next time ( cause I like the flavor) I'll reduce the lemon juice to 1 tbsp. and see what happens.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
