  • Cream margarine and sugar until fluffy. Add egg, vanilla and lemon extract. Blend in coconut, flour and cream of tartar. Roll into small balls (1-inch) and place on an ungreased cookie sheet. Bake at 350F degrees for 8 to 10 minutes until lightly browned. Cool.
  • For frosting: Blend all ingredients with wooden spoon or electric mixer and frost cookies.

  1. Killer cookie! I think I must have rolled my balls to big, because I only made about 2 dozen (rather than the 4 dozen) - but they are a delicious 2 dozen! I was concerned with the dough at first because it didn't seem to want to bind together - but once I started to make balls, the dough worked great. I followed the recipe as stated except I omitted the yellow food coloring in the frosting as I couldn't find it in my pantry (I know it is in there somewhere!). I will make these cookies again! Thanks for the recipe! Made for Photo Tag Game 1/9/09.
     
  2. a great recipe! i couldn't really taste the coconut, so i added more in my second batch, but they came out great. The frosting was absolutely delicious, and I added some fresh lemon zest. I would recommend that you roll the balls a little bigger, or else the come out like tiny bites, but that is just my preference. Thanks for the recipe! It was great.
     
  3. These are really good and easy to make. Rolled mine about the size of a jawbreaker and got about 4 1/2 dozen. I did dust with colored sugar though as these need a little more sweet to the cookie. Next time will add a scant more sugar to the dough, and a scant less lemon peel to the frosting as it's a bit tart for my taste. But, perfect bite size and should be a good alternative to all the Christmas candy. Will definitely make again.

  5. Well, I made these to take to my parents for Easter.... and it looks like I'll be making them AGAIN!!! Since it's not yet Easter and they are GONE!!!! The little gremlins who make to visit Auntie have eaten them all!!! That's okay they are absolutely Delicious! Like NELady, I made mine too big, because I only got about 3 dozen. I am a native Californian, born in the Los Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area. I love kids and animals.
