Gluten-Free Strawberry Banana Loaf

  • In a mixing bowl, bedat eggs until frothy.
  • Stir in oil, applesauce, sugar, strawberries, and banana.
  • In a separate bowl, combine flour, oats, powder, soda, and salt; stir to distribute evenly.
  • Stir two mixtures together JUST to moisten.
  • Spoon into a greased 9"x5"3" loaf and bake in a preheated 350* oven for about 1 hour.
  • Cool for 10 minutes then remove from pan to cool on wire rack.
  • Best if served the day after baking.
  • Enjoy!

  1. I haven't made this recipe due to it not having the applesauce measurement. If anyone has the measurement for the applesauce, please put it in the recipe so it makes sense.
     
  2. holds together, gets better as it ages-but pretty good straight out of the oven. I use 3 mini loaf pans and freeze two loaves. It freezes quite well. I use about 1/2 t Xanthan. And a little less oil than called for. I cut up and then mash strawberries a little, I like to have some chunks. And I add nuts because I like nuts. Definitely a keeper
     
  3. I chunked the strawberries and used my own gluten free flour blend. Other than that, I followed the recipe and it turned out wonderfully! It was moist and delicious and even my daughter liked it!

This recipe was really good and exceeded my expectations. I made no or little changes to the recipe and will definitely make it again. 4 star - A very good recipe. I liked it a bit, but had to make major changes. It may have a good flavour, but the texture was off or something. Usually I don't make three star recipes again. 2 star - I didn't enjoy this recipe. The flavour and texture was WAY off and so were the directions. I will not make this recipe again. 1 star - I don't give one stars! I think they are too mean!
