Fairfax Chocolate Icing

ingredients
- 2 chocolate, bitter squares
- 2 chocolate, semi-sweet square
- 3 tablespoons butter
- 6 tablespoons water
- 6 marshmallows
- 1⁄2 cup confectioners' sugar
- 1 teaspoon vanilla
directions
- Mix chocolate, sugar and water together.
- Cook about 5 minutes.
- Remove from heat, add marshmallows, butter and vanilla.
- Beat until thick enough to spread.

This a a great chocolate flavor and it ended up giving me a lovely finished product, but unless I did something wrong (which is entirely possible) this was more like a glaze than a spreadable icing. I ended up pouring it over the cake . Also I used large marshmallows cut in half, but they took a little longer than I would have expected to totally melt. You might want to leave the heat on for a minute or two after adding the marshmallows. -
This was really delicious.I used it for the hoho cake recipe. I melted dark chocolate candy, and it was still the best. Thanks for posting.... -
WOW! Surprisingly rich and creamy icing! A chocolate lover's delight. Definately adding this one to my recipe box. I only had bittersweet and unsweetened squares on hand, so I used what I had and added more powdered sugar to taste. It didn't seem to make a difference. Very easy and doesn't talk alot of time.

I don't think I'm a great cook but I'm the kind of cook who can walk into the kitchen and find good things in the fridge and pantry and make it into a meal that everyone thinks is pretty darn good. Sometimes I use a recipe and sometimes...not so much.
I have a great collection of cookbooks, and I love reading them and studying the pictures. Sometimes I even cook the recipes, LOL! And that is why I love Zaar, an unending source of recipes and pictures. It's heaven!
