Dried Blueberry, Cranberry or Apricot Banana Nut Bread

ingredients
- 473.18 ml flour
- 7.39 ml baking powder
- 2.46 ml baking soda
- 1.23 ml ground cinnamon
- 0.61 ml ground nutmeg
- 2 large eggs
- 5 medium bananas, mashed
- 236.59 ml sugar
- 118.29 ml butter, melted
- 118.29 ml walnuts or 118.29 ml pecans, chopped
- 118.29 ml dried blueberries, dreid cranberries or 118.29 ml dried apricot, cut into fours
directions
- preheat oven to 350degrees.
- grease bottom and 1in up the sides of TWO bread 7 1/2x3 1/2x2in bread pans; set aside.
- combine flour, baking powder, baking soda, cinnamon and nutmeg.
- in a medium mixing bowl, or food processor, combine eggs, bananas, sugar and butter. (I use I Can't Beleive It's Not Butter). Mix for 30 seconds.
- fold in nuts of your choice.
- spoon batter into prepared pans.
- bake at 350 for 40-45minutes, or until a toothpick inserted in the center of bread comes clean.
- cool in pan on a wire rack for 10minutes. remove from pan. cool completely on a wire rack and enjoy.

When making this recipe I did change one thing, using as I did 3/4 cup of a mix of dried cranberries & quartered drid apricots! Also chose walnuts over the pecans, & this bread was GREAT TASTING served with a thin spread of honey butter! [Tagged, made & reviewed for one of my adoptees in the current Pick A Chef]

My favorite cookbook is the ever trusted Better Homes and Gardens Cook Book stuffed in the shelves in of every womans kitchen for nearly 100yrs. I borrowed it from a friend-needless to say, I kept the cookbook and ditched the friend! LOL Baking is NOT my forte, however, after 20yrs in the torture chamber, I'm proud to say that I CAN bake a mean chocolate chip cookie and some fabulous breads during the holidays! Anything more than that & you're on your on for sure. My most popular dish w/the family is my Southern Potato Soup recipe. It is a family recipe. Please enjoy it's comfort in the Winter months.
