- 236.59 ml white sugar
- 118.29 ml brown sugar
- 1 large egg
- 236.59 ml butter
- 295.73 ml flour
- 295.73 ml quick-cooking rolled oats
- 177.44 ml coconut
- 4.92 ml baking powder
- 4.92 ml baking soda
directions
- Beat egg, add butter and cream.
- Add the two sugars and cream well.
- Add remaining dry ingredients and mix well.
- Bake at 350° for 8-10 minutes.

I was in the mood for coconut cookies, and this recipe fit the bill. As did other reviewers of this recipe, I decreased the amount of sugar to 3/4 cup due to my using sweetened coconut flakes. Also I increased the amount of coconut to 1 1/4 cups, as 3/4 cup didn't seem like enough to satisfy my craving. The cookies turned out chewy, crunchy and packed with coconut flavor. I think if I had added only 3/4 cup of coconut, the coconut flavor wouldn't have been as present. Thanks for sharing this recipe, Bert! Deeeelicious!

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21).
