Cinnamon Coffee Crinkles

"I have not made these yet but they are on my list of items to try for my cookie trays this Christmas. It has two of my favorite things - coffee & cinnamon! :) Cooking time is per batch of cookies in oven."

  • Heat the oven to 400°F.
  • Stir the eggs and instant coffee in a small bowl until well blended; set aside.
  • Mix the flour, cream of tartar, baking soda, cinnamon and salt in a medium bowl, set aside.
  • Beat the butter, shortening, granulated sugar and egg mixture in a large bowl with an electric mixer set on medium speed until light and fluffy.
  • Stir in the flour mixture.
  • Shape the dough into 1 inch balls.
  • Roll the balls in the powdered sugar.
  • Place 2 inches apart on ungreased baking sheets.
  • Bake for 10-12 minutes or until set.
  • Remove the cookies from the baking sheets.
  • Cool completely on wire racks.
  • Store in a tightly covered container.

  1. Holy cow are these ever good! I love how the cinnamon and coffee flavour comes through clearly - they're a nice change from typical chocolate chip or oatmeal cookies. I got 45 cookies out of the recipe, and they baked in 11 minutes in my oven. I'll make these again, that's for sure! Thanks for posting, Hokies! Made for Zaar Stars Tag.
     
  2. I made these the other day as part of my early Christmas baking. I got 69 cookies out of the batch based on the size I made them. My oven required baking for around 8 minutes to get them set. I tried it both with the powdered sugar and without. The ones with the powdered sugar ended up with more of a "crackle" look for me and were not too much sweeter than without it. They were good, but neither my husband nor I thought that the cinnamon taste was very strong. My husband, who is not a coffee lover, did not think that the coffee taste was very prominent either. I did not need to press down near the end of bake time; they baked out pretty close to the picture. Thank you for posting!
     
  3. These are wonderful! Cinnamon and coffee, how could I go wrong? I did roll mine in the sugar before baking (for DH) and I much prefer the look of Coffee B's cookies without the sugar. Also the recipe doesn't say to squish the dough balls so I didn't and I have incredibly yummy cookie lumps, LOL. These puppies didn't spread at all like I was expecting from the soft dough. It doesn't hurt the taste any at all though. I used 3/4 tsp cinnamon and next time I'll use 1 tsp. :D
