Chocolate Zucchini Bread

This is the only way I can get my spouse to eat zucchini!

  1. Preheat oven to 350°.
  2. In a large mixing bowl combine eggs, sugar, oil, and vanilla, mix well.
  3. In microwave melt 2 tbsp butter-add cocoa powder, mix well, and cool.
  4. Grate zucchini.
  5. Add zucchini and cocoa powder mix to the bowl, mix well.
  6. In another bowl add flour, baking soda, cinnamon, salt.
  7. Blend dry ingredients into the zucchini mix.
  8. Toss chocolate chips with 2 tsp flour (this will prevent them from sinking to the bottom), add to the mixture mix in chopped nuts.
  9. Grease and flour 2 loaf pans.
  10. Pour batter into 2 loaf pans.
  11. Bake 60-70 minutes until toothpick inserted in center comes out clean.
  12. Cool on rack for 10 minutes in the pans, remove and cool on rack.

This bread is a chocaholic's dream come true! It's rich, chocolatey, and delicious! I usually eat quick breads for breakfast, but this one is more of a dessert, which is fine with me. I'll definitely be making this again.

Very good, but I had a problem integrating the cocoa after I mixed it with the melted butter. It clumped a lot andI spent too much time trying to break up the clumps.

This if very good, moist and the chocolate taste is perfect. Next time I will increase the flour a bit. The texture was a little too moist for my taste. Thanks for sharing.
