Choc Banana Bread

- 250 g flour
- 2 teaspoons baking powder
- 125 g unsalted butter, softened
- 250 g caster sugar
- 4 bananas, ripe, mashed
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 175 g chocolate chips (dark or milk, good quality is a must!)
directions
- Preheat the oven to 180c/350F/Gas4.
- Sift flour and baking powder into a bowl.
- In a separate bowl combine the butter, sugar, eggs and vanilla.
- Stir in the chocolate chips.
- Gently combine the wet and dry ingredients - careful not to overmix (or the end result will be a tough and dry loaf).
- Pour batter into a nonstick or lightly greased 19x11cm (7 1/2 x 4 1/2 inch) loaf pan.
- Bake 1 hour and 15 minutes or until skewer inserted comes out clean.
- Remove from oven. Leave to cool in tin for 5 minutes before turning out on a wire rack to cool.
- Serve in thick slices with creamy butter!
