- 1 1⁄2 cups sugar
- 1 cup butter
- 4 eggs, divided
- 2 cups flour, sifted
- 1 tablespoon lemon juice
- 1 (21 ounce) can cherry pie filling
- 1 tablespoon powdered sugar
directions
- Preheat oven to 350 degrees Fahrenheit.
- Cream together sugar and butter; add eggs, one at a time.
- Add flour and lemon juice; mix well.
- Pour into a greased 9x13 baking pan.
- Mark off squares with a butter knife.
- Put 1 spoonful of cherry pie filling in the middle of each square.
- Bake for 45 minutes.
- Remove from oven and cool until warm.
- Sprinkle with powdered sugar; serve warm with ice cream.

We really enjoyed this lovely cake. It has a subtle lemon flavor that gets its pow from the cherries, the texture is wonderful. I served the cake warm with a sprinkling of powdered sugar and a small scoop of ice cream, it was total ambrosia. What a great comfort dish, my dh was in heaven and ate most of the cake himself. Like Deb I found that I only used 1/2 the can of cheeries and that they all fell to the bottom of the cake. Next time I will add more of the cheeries. Thanks so much for sharing this quick and easy to make treat. I will be making this one again and again.

My family and I are enjoying this, but I think I might have made a mistake or two. Okay, I put a spoonful of pie filling in each area marked as instructed---this used only half the can. When it finished cooking, the marks were no longer visible, and all the cherry pie filling is on the bottom. I did use self-rising flour, so I wonder if that was a mistake. Still it tastes good, and that is what is important. I am likely to make this again because, as I say, my family is enjoying it.
