very moist if you don't over bake it . I also add 1/8teaspoon of cinnamon, allspice ,ginger .and 1tablespoon of Crème De Banana to the mashed banana . I didn't try the topping because it seems to sweet

Made this just a day after making a different banana bread recipe, but both are so far from just a plain ol' banana bread that I had no problem with their proximity! Delightfully delicious, both of them! I did use the rum extract in this one, & that, in combo with the coconut made for an exceptional loaf! Definitely a winner & a great keeper of a recipe! Banana bread has never tasted so good! Thanks for sharing the recipe! [Made & reviewed in the Almost 5 Special Event]

This is one terrific banana bread. I didn't use the real coconut because of high high sat fat so I used Malibu rum and some coconut extract. The loaf baked up with a lovely rounded top that looked great and it was so moist and wonderfully flavored that it was hard to stop slicing. It was actually finished off on day 4 and it hadn't dried out. Thanks diner for a great banana bread thats a keeper!
